Responsibilities

We’re looking for a hands-on Director of Labeling and Nutrition Compliance to lead labeling and nutrition compliance across our meals, ingredient data, product claims, and customer-facing information.
This role requires strong technical judgment and the ability to lead within a cross-functional organization. You will establish clear accountability, verify nutrition and labeling information, and ensure teams have practical controls for maintaining compliance as ingredients, recipes, suppliers, systems, and markets evolve.
Within your first 90 days, you will establish technical acceptance criteria and a risk-ranked review baseline, verify a representative set of supplier and market substitutions delivered by Supply Chain, and demonstrate an independently reviewed, controlled release pilot that includes label-to-website reconciliation. You will also align ongoing verification and escalation measures with functional owners, while Supply Chain retains ownership of the data remediation plan and delivery.
Lead CookUnity’s labeling and nutrition compliance program. Establish practical standards consistent with applicable Nutrition Labeling and Education Act (NLEA) requirements for ingredient declarations, allergens, Nutrition Facts, serving sizes, net quantity, claims, required statements, and market-specific labeling, in partnership with Nutrition & Standards.
Own the create, review, approve, and distribute (CRAD) labeling process, governance, and consolidated KPI dashboard. Define functional accountability, independent review requirements, approval records, version controls, release criteria, escalation paths, and corrective-action follow-through.
Define regulatory and technical requirements for ingredient master data owned by Supply Chain Operations. Lead the specification approval and stakeholder sign-off process, including supplier-item and market specificity, source evidence, approved substitutions, and acceptance criteria.
Review and approve ingredient data eligibility for labeling and claims, tracking and escalating unresolved dependencies.
Own third-party laboratory validation, including lab qualification, risk-based representative sampling across suppliers and markets, appropriate testing methods, and comparison against approved recipes, portions, declared nutrition, and claim criteria.
Investigate laboratory discrepancies and drive verified corrections through the accountable data, recipe, or execution owner.
Approve product, nutrition, standards, ingredient, and dietary claims before publication across channels. Require substantiation, approved wording, applicability and conditions, review dates, and change control.
Obtain documented Food Science Lab approval of the nutritional basis for claims, required Legal concurrence, and appropriately qualified clinical approval of medically tailored meal criteria.
Set risk-based technical review priorities for estimated and generic legacy records. Partner with Supply Chain, which owns data remediation and maintenance, to verify corrections, assess supplier and market equivalence, and confirm impacts on recipes, nutrition values, allergens, and claims.

Required

7+ years of progressive hospitality leadership experience in high-volume, guest-facing restaurant, café, retail, or experiential environments.
Direct experience opening a new restaurant or hospitality venue from pre-construction through launch is strongly preferred.
Proven ability to lead complex, concept-driven operations with a strong focus on guest experience, team performance, and operational consistency.
Strong business and strategic judgment, with experience using guest feedback, operational data, and performance metrics to refine service models and improve results.
Experience overseeing bar and beverage operations, including vendor management, compliance, inventory controls, and service execution.
Strong financial acumen, including experience with budgeting, forecasting, labor management, cost control, and P&L performance.
Exceptional communication, problem-solving, and organizational skills, with the ability to work effectively across internal teams and external partners.
Comfort working with technology-enabled hospitality environments, including POS systems, digital ordering platforms, CRM tools, and business intelligence or reporting systems.
Ability to thrive in a fast-paced, evolving environment while maintaining a strong focus on guest experience, team culture, and business performance.
NYC Food Protection Manager Certification required, or ability to obtain certification prior to beginning management duties at the Flagship.

Preferred

3+ years of successful senior hospitality leadership experience in New York City.
Experience leading high-traffic, mixed-use hospitality environments that may include dining, café service, takeaway, retail, events, or other experiential components.
Experience with technology-enabled service models, omnichannel retail, and digital ordering integrations.
Pre-opening experience in a flagship, concept-driven, or first-of-its-kind location.
